You’re shocked, I know. You’re thinking to yourself, “Is this the right blog?” I have said it before, and I’ll say it again, if a recipe makes its way to my blog it’s two things, easy and delicious. This one clearly fits the bill. Even better? The base of this recipe is a cake mix. It doesn’t get any simpler than that. In fact, the hardest part of this recipe is locating the cinnamon chips. When you find them, stock up. My local grocery stores did not have them, Walmart, on the other hand, did.
Let me give you a little background on this treat. My good friend surprised me at work with this as a birthday cake. Everyone loved it and the recipe was quickly passed around. You can thank me later for sharing this with you. It is that good.
The ingredients are simple.
1 yellow cake mix
1 stick of butter, softened
1 cup of pumpkin puree
1 lg. egg
1 cup of cinnamon chips
1 tsp. ground cinnamon
1/4 cup sugar
1 additional tsp. of ground cinnamon.

Preheat the oven to 350 degrees. Spray the bottom of a 13 x 9 pan with no-stick cooking spray.
In a large mixing bowl, combine the cake mix, egg, and softened butter.
Next, add the pumpkin, 1 tsp. ground cinnamon, and the cup of cinnamon chips.
Once these ingredients are mixed in, transfer the mixture to your baking pan.
In a small bowl combine the granulated sugar and the remaining tsp. of cinnamon.
Sprinkle the cinnamon sugar mixture on top of the bars.
Bake in oven for 25 minutes. Let cool but not too much, these are delicious warm. As my daughter said on her first bite, still warm from the oven, “It’s like it’s melting in your mouth.”
